Ain’t Yo Momma’s PB&J

Toasty-warm, gooey, sweet, goodness. That’s this. It’s the best PB&J you’ve ever had and probably has the calorie count to prove it, haha!
I took a simple childhood favorite and made it a luxurious indulgence. Just add mimosa and you’ve got yourself quite the brunch.
Ingredients
- 2 slices brioche bread
- 1 tbsp raspberry jam
- 2 tbsp crunchy peanut butter
- 1/3 cup mixed frozen berries (I use raspberries, blueberries, and blackberries)
Directions
- Heat a nonstick pan on medium
- Gently spread your jam and peanut butter on each side of the brioche slices. Brioche is a delicate bread so be careful not to mash it or tear it apart with too much pressure.
- Place the peanut buttered slice of brioche straight on the hot pan, PB side facing up.
- Take a handful of your mixed berries and lightly press them into the peanut butter side, just enough to get them to stick and prevent them from falling out of the sides.
- Place the other slice of brioche, with the jam, on top of the frozen fruit, jam side down, to make a sandwich.
- Lightly toast each side of brioche until the frozen fruit is thawed and the peanut butter is melty, the bread should be medium golden brown.
- Remove from pan and cut diagonally to serve!
*This recipe is for one sandwich.
