Baked Caprese with Goat Cheese

This is really simple but really delicious. It’s an app you can throw together right as you need it as it hardly takes any prep time and only needs to be in the oven for 25-30 minutes. Make sure to serve with some fresh, crusty French bread for the perfect way to soak up the yummy juices.
Serves 4
Ingredients
- 1 carton of cherry tomatoes (can be anywhere between 12-19 ounces)
- 8 cloves of garlic, skins removed and smashed
- 1/3 cup fresh basil, chopped
- 3 sprigs fresh rosemary
- 1 oz goat cheese
- 3 tbsp EVOO
- salt and pepper to taste
Instructions
- Preheat the oven to 450 degrees. Toss the tomatoes with EVOO, herbs, garlic, salt and pepper. Roast tomatoes in a cast iron skillet (or on a baking sheet) for 15 mins. Remove and stir gently, return to oven for another 10-15 mins, until tomatoes are wrinkled and beginning to char only slightly.
- Crumble goat cheese across a serving platter and spoon roasted tomato mixture over top of the goat cheese.
- Top with fresh basil and serve while warm alongside fresh, crusty bread.
