Blackened Coffee & Garlic Chicken + Garden Salsa Farro

Chris loves this chicken, it’s SO easy and takes almost no time to prep. It’s a huge cheat code using the TJ’s seasoning as it’s super flavorful, has a sweet-savory balance, creates a crust-like appearance, and requires no inventive thinking or mixing of your own. The perfect thing for when you haven’t planned dinner or marinated anything beforehand.

Ingredients
- 1.5-2 lbs chicken breast, skinless boneless
 - Trader Joe’s Coffee & Garlic BBQ Rub and Seasoning
 - 2 tbsp olive oil
 - 1 cup farro
 
Garden Salsa
- 10 yellow cherry tomatoes * you can use red ones too if you can’t find yellow
 - 1 cup parsley
 - 2 tbsp EVOO
 - 4 cloves garlic
 - 1 shallot
 - 1 juice of a lemon
 - salt and pepper
 
Instructions
- Cook your farro according to the package instructions.
 - Rub chicken breasts generously with Trader Joe’s seasoning, ensuring they are covered completely. Let it sit for a few minutes while moving on to make the garden salsa.
 - Make the garden salsa. In a food processor, blend the tomatoes, parsley, EVOO, garlic, shallot, and lemon juice until it resembles slightly chunky salsa. It doesn’t need to be smooth, a little unevenness in texture is good. In a medium bowl, toss the garden salsa with the farro, just until roughly combined.
 - Heat 2 tbsp olive oil in a large skillet with cover on medium high. Add the chicken breast to the skillet and cook through, about 5-8 minutes each side. The seasoning should turn dark and look blackened, giving it a caramel-bbq-like flavor.
 - Serve the chicken alongside the garden salsa farro, and enjoy!
