Burrata Goddess Salad

This is such a simple but yummy afternoon snack. You can even serve this as an appetizer if you double the recipe! The honey pesto is sweet and fresh and a perfect compliment alongside the cheesy burrata.
Ingredients
- 1 or two pieces of fresh burrata
- 1 nectarine, pitted and sliced
- 1 seedless orange or mandarin, sliced and rinds removed
- 2 tbsp pomegranate seeds
- 2 sprigs fresh thyme and/or oregano leaves
- 1 tsp balsamic reduction glaze, for topping
Honey Pesto
- 1/2 cup pignoli nuts
- 1 tsp pink Himalayan salt
- 1 tsp raw honey
- 2-3 sprigs fresh mint, extra for topping
- 6 leaves fresh basil
- 1 tsp warm water
Instructions
- Make the honey pesto. In a food processor, blend the pignoli nuts, salt, honey, mint, and basil until smooth. Add up to tsp of warm water slowly, just to help blend and until you have a consistency similar to syrup.
- Spoon the honey pesto onto the surface of a serving plate. Arrange the burrata, nectarine slices, and orange slices over the honey pesto. Sprinkle the pomegranate seeds, thyme, oregano, and extra mint leaves across the plate. Drizzle balsamic glaze over the burrata. Serve and enjoy!
