Cranberry Ginger Holiday Martini

I served these homemade specialty cocktails this year at Friendsgiving and the majority of comments made were “these are dangerous!” I was reassured that it was a compliment when everyone said a quick ‘yes’ to round #2. Ginger, cranberry, and a little bit of mint made these martinis festive and unique!
Makes 16 servings.

Ingredients
- 1/2 cup fresh or frozen cranberries
 - 1 bunch fresh mint
 - 1-2 fresh ginger roots, peeled and sliced into pieces
 - 1 cup turbinado sugar
 - 100% cranberry juice *NOT cranberry juice cocktail
 - vodka
 - candied ginger pieces, for garnish *Trader Joe’s carries them in the nut and dried fruit section
 
Instructions
- In a medium saucepan, bring 1 cup cranberry juice, cranberries, sugar, and ginger to a boil. Reduce heat and bring to a simmer for 3-4 minutes, until sugar has dissolved. Add fresh mint and simmer for 2 additional minutes. Remove from heat and let stand for 20 minutes.
 - Strain and chill syrup for 1-2 hours or until ready for use.
 - For one serving, add ice, 3 ounces (or two shots) of vodka, about one tablespoon cranberry syrup and one tablespoon cranberry juice. Taste and adjust per preference. Shake and pour into a sugar rimmed martini glass. Garnish with mint leaves and candied ginger on a toothpick.
