Easy Asian Cucumber Salad

I always love ordering the cucumber salad from Japanese restaurants. This at-home version actually packs a WAY bigger flavor than what I usually get delivered to the table at a restaurant. It’s vinegar-y and tangy, which Chris and I love!
This recipe actually goes perfectly alongside the Spicy Beef Bowl as a topping! Or alone, it’s a great afternoon snack in the summer.
Ingredients
- 5-6 Persian cucumbers, thinly sliced
- 2 cloves garlic, minced
- 2-3 stalks of green onions, sliced thin
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp granulated sugar
- 1 tsp salt
- 1 tbsp Hoy Fong chili garlic sauce
- 1 tbsp toasted Sesame seeds
Instructions
- In a large bowl, mix the garlic, green onions, soy sauce, rice vinegar, sesame oil, sugar, salt, and chili garlic sauce until combined. Add the sliced cucumbers and toss to coat.
- Top with toasted sesame seeds and that’s it!
