Easy Asian Cucumber Salad

I always love ordering the cucumber salad from Japanese restaurants. This at-home version actually packs a WAY bigger flavor than what I usually get delivered to the table at a restaurant. It’s vinegar-y and tangy, which Chris and I love!

This recipe actually goes perfectly alongside the Spicy Beef Bowl as a topping! Or alone, it’s a great afternoon snack in the summer.

 

Ingredients

  • 5-6 Persian cucumbers, thinly sliced
  • 2 cloves garlic, minced
  • 2-3 stalks of green onions, sliced thin
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp granulated sugar
  • 1 tsp salt
  • 1 tbsp Hoy Fong chili garlic sauce
  • 1 tbsp toasted Sesame seeds

 

Instructions

  1. In a large bowl, mix the garlic, green onions, soy sauce, rice vinegar, sesame oil, sugar, salt, and chili garlic sauce until combined. Add the sliced cucumbers and toss to coat.
  2. Top with toasted sesame seeds and that’s it!
