Falafel Kale Salad

I love a good salad but sometimes I want more than just cold lettuce and veggies. Falafel is a yummy way to add something warm and filling while still keeping your salad vegetarian and healthy. The shredded kale dressed with sesame oil is simply perfect and doesn’t distract from the other flavors in this bowl. Quick and easy lunch for one!

Serves 1

Ingredients

  • 1 box of Trader Joe’s Falafel mix
  • 1 tbsp grapeseed oil
  • 2 cups shredded kale
  • 1-2 tbsp sesame seed oil
  • 2 tbsp toasted pine nuts
  • 1/4 cup greek feta cheese
  • 5-7 cherry tomatoes, halved
  • 1/4 cup orange or yellow bell pepper, diced
  • 2 sprigs fresh mint, leaves picked and minced
  • 2 sprigs fresh dill, minced
  • 1/2 lemon
  • 1 tsp Za’atar seasoning
  • 1/2 cup plain greek yogurt
  • salt and pepper, to taste
  • 1 tbsp hummus, optional
  • 1 tbsp Trader Joe’s garlic spread dip, optional

 

Instructions

  1. Make falafel according to package directions; mix 1 cup dry mix + 3/4 cup water mix, cover loosely, and let sit for about 20-30 minutes.
  2. Mix greek yogurt, mint, dill, the juice of 1/2 lemon, and Za’atar seasoning in a small bowl. Salt and pepper to taste. Set aside.
  3. Toss kale and sesame oil in a medium sized bowl. Top kale with pine nuts, feta cheese, cherry tomatoes, bell pepper, set into piles. Add spoonfuls of greek yogurt dip, along with hummus and garlic spread if you like.
  4. Heat the grapeseed oil in a saucepan on the stovetop on medium-high heat. Form small 1-inch patties of falafel mix. When the oil is hot and glistening, add falafel patties to the pan. Allow each side to fry until falafel is crisp and golden brown. Remove falafel from pan and allow to sit on a paper towel to absorb excess oil. Top salad with warm falafel and enjoy!
