French Onion Soup

French onion soup. Just the name brings me feelings of buttery warmth! This is the ultimate comfort food during the colder months of the year when you crave something indulgent. I always loved ordering this soup at restaurants and learning how to make it at home proved to be very dangerous!

 

It’s really a simple ingredient list, it just takes a little patience and time to do it right.

Don’t rush through this one, the slow method is what makes this soup great. My advice – crack open that bottle of red and pour yourself a glass while you enjoy the cooking process.

 

Ingredients

  • 3 medium sweet or yellow onions, thinly sliced
  • 4 cloves of garlic, smashed
  • 1 stick of butter
  • 1 quart beef broth
  • 3 sprigs of thyme
  • 5 bay leaves
  • 1 cup of red wine
  • 2 tbsp flour
  • 1/2 block of Gruyere cheese, sliced *you can actually use a combination of cheeses from pecorino romano to Swiss! but Gruyere is the traditional choice
  • 1/2 fresh crusty French baguette, sliced into 1/2 inch thick pieces
  • 1 tbsp EVOO

 

 

Directions

  1. Heat a large pot to medium and add EVOO when hot. Add butter, onions, garlic, thyme, and bay leaves and sauté until the onions are translucent, careful not to burn. This takes about 15 minutes.

 

 

3. Add red wine, turn heat up to bring the liquid to a boil and allow to simmer until the alcohol cooks off, about 5 minutes. When its ready, you can smell the liquid and it should not have an alcohol sting to it. Remove thyme and bay leaves and discard.

4. Reduce heat to medium low and sprinkle flour across the onions to coat evenly. Stir frequently for 10 minutes so the raw flour taste cooks off. Stir in beef broth and turn heat back up to medium to simmer for 20 minutes. Salt and pepper to taste and keep warm on low while you make the baguettes + cheese.

5. Heat the oven to broil and arrange baguette slices on a baking sheet. Lay slices of cheese on each slice of bread evenly and broil until cheese is bubbly, melty, and turning golden brown.

6. Ladle soup into individual bowls and float a few toasts with cheese atop each bowl of soup. Serve immediately! Complete the meal with this Ratatouille recipe for a French themed night!
