Herb Burrata Salad

This salad is simple, fresh, and perfect for hot summer days when you don’t want to put a ton of effort into a deliciously light lunch. I recommend using a great high quality olive oil and balsamic, as the quality will really determine the depth of flavor in this simple dressing. With such simple ingredients to dress this salad, its important that you make it count!

 

Ingredients

  • 1.5 cups of shredded kale
  • 1/4 cup macadamia nuts, roughly chopped
  • 1/4 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1 nectarine, sliced
  • 1/4 cup purple grapes, halved
  • 2-3 sprigs fresh dill, roughly chopped
  • 4-8 leaves fresh basil, roughly chopped
  • 1 fresh piece of burrata cheese
  • 1-2 tbsp flavored balsamic (I recommend espresso flavored!) or white balsamic
  • 1/2 tbsp high quality EVOO, plus a little extra for topping
  • pink Himalayan salt and fresh ground black pepper to taste

 

Instructions

  1. In medium sized bowl, add kale, tomatoes, macadamia nuts, avocado, nectarine, grapes, basil, and dill. Top with 1 tbsp balsamic and EVOO and toss gently. Taste to see if it has enough balsamic, add up to 1 tbsp more if needed. Salt and pepper to taste.
  2. Top with burrata and finish with a drizzle of EVOO and a smidge of pepper over the cheese.
