Lemon Sugar Cookies

The first time I made these lemon cookies, I knew I would have to save the recipe to bake again! These cookies are light and fresh, crunchy on the edges but soft and chewy in the middle. They are the perfect dessert for a summer afternoon or to bring to a friendly BBQ.
It’s a simple recipe, easy to whip up in a jiffy. I made these and ended up sandwiching a scoop of Ben and Jerry’s Cherry Garcia in between two cookies for an ice cream sandwich, which I highly recommend trying!
Ingredients
- 1 cup butter cold, cut into cubes
- 2 cups sugar
- 2 eggs
- 1 tsp pure vanilla extract
- 1 1/2 tbsp fresh lemon juice
- 1 tbsp lemon zest * you can put in more lemon zest for extra lemon flavor!
- 3 cups flour
- 1 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
Directions

Preheat oven to 350 degrees.

In a large bowl with a hand mixer or in a standing mixer, cream butter and sugar for 4 minutes until light and fluffy. Add eggs, vanilla, lemon juice, lemon zest and mix to combine.

Stir in flour, baking powder, baking soda, and salt and mix just until combined.

Drop about a tablespoon of dough per cookie onto a baking sheet covered with parchment paper.

Bake for 11 minutes. Remove from oven and immediately sprinkle with sugar.
