Mama Lisa’s Oat Peach Crumble

I really don’t like pie and my mom knows that better than anyone. So in my opinion, this crumbly, warm dessert is ideal for a late afternoon where wholesome, home-baked pie might normally draw a crowd.

Ripe, summer peaches make this cobbler into the gooey-sweet, buttery treat it is. Served with ice cream, it’s ideal for a summer BBQ!

Ingredients

  • 5-6 peaches, sliced in eighths
  • 2 sticks butter, room temperature
  • 1 1/2 cups rolled oats
  • 1/2 cup brown sugar
  • 2 tsp nutmeg
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 tbsp flour
  • Ice cream, optional

 

Recipe

  1. Preheat oven to 350 degrees.
  2. In a large bowl, whisk together cinnamon, flour, and salt. Add the sliced peaches and gently mix to coat the fruit with the dry ingredients.
  3. Layer the peaches along the bottom of an 8×8 baking dish, keeping them lined closely together. Repeat for about 3 layers or until all peaches have been used.

4. To make the Crumble, mix the butter, nutmeg, rolled oats, and brown sugar with a mixer. The crumble mixture should stick together enough to hold but still be dry enough to fall apart into small pieces by rolling with your fingers.

5. Using your hands, sprinkle the oat crumble over the peaches to create a loose layer of crumble.

6. Bake for about 25-30 minutes. Serve warm with vanilla ice cream if you like!
