Spicy Peanut Thai Noodles

Sometimes I get a craving for spicy peanut pad Thai but I don’t want to leave the house to get it. Solution – this recipe! At-home noodles that hit the spot for that creamy, peanut buttery, spicy taste.

Serves 1 person

Ingredients

  • 4 oz package flat rice noodles (or you can sub for 1 pack ramen noodles – without the spice packet)
  • 2 cloves garlic, minced
  • tbsp fresh grated ginger
  • 1/2 shallot, minced
  • 1 medium carrot, thinly sliced
  • 2/3 cup chicken broth *low sodium preferred
  • 1/4 cup creamy peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 3 dashes fish oil
  • 1 tbsp maple syrup
  • 1 tbsp rice vinegar
  • juice of 1/2 small orange
  • dash of red pepper flakes
  • 1 tbsp sliced green onion
  • 1 tsp cilantro, roughly chopped
  • 1/2 tsp toasted sesame seeds
  • *1 tsp chopped roasted cashews or sliced toasted almonds
  • *Sriracha for topping, optional

 

Instructions

  1. Bring a large pot of water to a boil and cook noodles according to package instructions. Strain, empty into large bowl, and set aside.
  2. Heat sesame oil over medium-high in a large sauté pan. Add garlic and shallots, sauté for 2 minutes or until fragrant. Add 1/3 cup of the chicken broth, carrots, and ginger, sauté until carrots and ginger are semi-soft and chicken broth is somewhat reduced, about 2 more minutes.  Turn heat to low and mix in peanut butter, soy sauce, fish oil, maple syrup, orange juice, red pepper flakes, and rice vinegar. Whisk in additional chicken broth slowly, watching for a glossy, smooth consistency that is viscous enough to thinly coat and stick to the back of a spoon. Add more broth if needed to achieve desired consistency.
  3. Remove from heat and stir in green onion. Taste the sauce, if you like more sweet you can add more maple syrup, or for more salty add more soy sauce.
  4. In the bowl with the noodles, pour peanut sauce over noodles and toss gently. Add more or less sauce, depending on your preference, add it all for extra saucy-ness! Or save some for topping 😉
  5. Serve topped with sesame seeds, nuts, cilantro, and Sriracha, if you like. Enjoy!
