Wenzl-Family Potato Salad

So my mom refuses to write any recipe down meaning I had to do the guess work myself lol. But I cracked the code to my family’s potato salad recipe that was at every BBQ and Christmas Eve growing up.
I’m not crazy about potato salad because this is the only one worthwhile in my book.
Ingredients:
- 6-8 Gold Yukon potatoes
- 2 cups of mayo
- 3 tbsp apple cider vinegar
- 2 tbsp dijon mustard
- 3/4 cup chopped red onion
- 1/4 tsp ground mustard
- fresh cracked pepper and salt to taste
Directions
- Fill a large pot with water and a dash of salt and turn on high to bring to a boil
- Dice the potatoes roughy into 1/2 inch cubes. It doesn’t have to be perfect at all!
- Add potatoes to boiling water and cook until they become soft throughout. You should be able to easily stick a fork through a peice without it completely falling apart. When they are at this stage, strain and set aside.
- In a large bowl, mix the mayo, apple cider vinegar, mustard, red onion, and ground mustard. Salt and pepper to taste. The dressing should be tangy and peppery.
- Add the potatoes to the dressing and toss to coat. I like to use my spatula or wooden spoon to lightly mash and break apart some of the pieces so that the result is less uniform.
- Let the mixture sit for at least 30 minutes. Serve when cooled to room temperature. *I tend to eat the leftovers cold straight from the fridge!
